Consumers' trust is a key factor in dealing with rising concerns about food safety and food quality, but only few studies have dealt with consumer attitudes and none of them has tried to model the process of consumer response. This book reports the main findings of an european project aimed at analysing trust along the food chain and its relationship with food risk communication. Donato Romano is Professor in Agriculture in Economic Development at the University of Florence, Italy. He has been visiting scholar at the Food Research Institute, Stanford University, and professeur visiteur at the Centre de Recherche en Economie du Développement, FUNDP Namur. His research interests are rural development in developed and developing countries, the economics of food quality, and natural resource economics.

Gianluca Stefani is Associate Professor in Food Policy at the University of Florence, Italy. He has obtained a MSc in Agricultural Economics from the University of Reading and he is currently PhD candidate in Environmental Economics and Management at the University of York. His research interests are regulatory impact analysis in the food industry, the economics of food quality and valuation methods for non market goods.
